Almond Cookies

Ingredients

1/2 cup Unsalted Butter

6 tablespoons Maple Sugar *

1 teaspoon Vanilla Extract

1 cup Gluten Free Oat Flour

1 cup Almond Meal/Flour

Topping

1/2 teaspoon Ground Cinnamon

2 tablespoons Maple Sugar

Description

Brown sugar can replace maple sugar.

Gluten Free, Low Cal, Low Carb, Low Sugar, Soy Free.

Directions

Preheat oven to 300°F. Grease cookie sheet; set aside.

With a hand mixer, blend the butter, maple sugar and vanilla extract until creamy.

Add the almond meal flour and the oat flour and mix until the dough sticks together.

Form the dough into 1-1/2 inch balls. Place them on the prepared cookie sheet and bake for 30-35 minutes.

Coat the cookies in the cinnamon/maple sugar mixture while they are still warm.

Allow cookies to cool completely before enjoying.
